			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-570" title="smore_cupcake" src="http://www.cookiegiftbaskets.com/gram/wp-content/uploads/2010/08/smore_cupcake.jpg" alt="smore_cupcake" width="184" height="252" />It&#8217;s still summer, so it&#8217;s still the perfect time to whip up some S&#8217;Mores!  Or even better yet, how about some S&#8217;Mores Cupcakes?  All the delicious flavor of a S&#8217;Mores in a cupcake &#8211; what more could you ask for?  These are perfect for that company picnic, family gathering or church bake sale.</p>
<p>Everything with this recipe is from scratch, so if you need to cut some corners a box mix of your choice can be used.</p>
<p><strong>Ingredients:</strong></p>
<p>For the graham cracker crust:<br />
1½ cups graham cracker crumbs<br />
¼ cup sugar<br />
5 1/3 tbsp. unsalted butter, melted<br />
8 oz. bittersweet chocolate, finely chopped</p>
<p>For the cake:<br />
2 cups plus 2 tbsp. sugar<br />
1¾ cups all-purpose flour<br />
¾ cup plus 1 tbsp. cocoa powder<br />
1½ tsp. baking powder<br />
1½ tsp. baking soda<br />
1 tsp. salt<br />
2 large eggs<br />
1 cup whole milk<br />
½ cup vegetable oil<br />
2 tsp. vanilla extract<br />
1 cup boiling water</p>
<p>For the frosting:<br />
8 large egg whites, at room temperature<br />
2 cups sugar<br />
½ tsp. cream of tartar<br />
2 tsp. vanilla extract</p>
<p><strong>Directions:</strong></p>
<p>Preheat the oven to 350° F.  Line two cupcake pans with paper liners.   In a small mixing bowl, combine the graham cracker crumbs, sugar and  melted butter; mix well with a fork.  Drop about 1 tablespoon of the  graham cracker mixture in the bottom of each cupcake liner and press  down to line the bottom. <em> </em>Sprinkle a small amount of the chopped chocolate on top of the graham  cracker crusts.  Bake for 5 minutes.  Remove from the oven (keep oven on).</p>
<p>To make the cake batter, sift together the sugar, flour, cocoa  powder, baking powder, baking soda and salt in the bowl of an electric  mixer fitted with the paddle attachment; mix on low speed just to  combine.  In a mixing bowl, combine the eggs, milk, vegetable oil and  vanilla extract; whisk together.  Add to the dry ingredients and mix on  low speed for 30 seconds.  Scrape down the sides of the bowl, then beat  on medium speed for 2 minutes.  Add the boiling water and stir just to  combine (batter will be thin).</p>
<p>Divide the batter evenly between the prepared cupcake liners, filling  each about ¾ of the way full.  Return the pans to the oven and bake  about 18-20 minutes, until a toothpick inserted in the center comes out  clean, rotating the pans halfway through baking.  Allow to cool in the  pans 5-10 minutes, then remove and transfer to a wire rack to cool  completely.</p>
<p>To make the frosting, combine the egg whites, sugar and cream of tartar in the top of a double boiler. <em> (Note: I just set my clean, dry mixer bowl over simmering water, to avoid dirtying two bowls.) </em>Heat  the mixture, whisking frequently, until it reaches 160° F with an  instant-read thermometer.  Transfer the mixture to the bowl of an  electric mixer fitted with the whisk attachment.  Whisk starting at low  speed and gradually increasing to medium-high speed until stiff, glossy  peaks form.  Mix in the vanilla until combined.  Frost cooled cupcakes  as desired.  Brown with a kitchen torch and garnish with chocolate and  graham cracker segments (optional).</p>

<li>Preheat oven to 350 degrees F. Position the oven rack in the middle of the oven. Line two cookie sheets with parchment paper.</li>
<li>In a large mixing bowl, beat melted butter and sugars together until fluffy. Beat in the egg substitute and vanilla extract. Set aside. In a small mixing bowl, whisk together the flours, baking soda, baking powder, salt, cinnamon and rolled oats. Add dry ingredients to the wet ingredients, mixing until well combined. Fold in the chocolate chips, strawberries and chopped walnuts.</li>
<li>Drop cookie batter onto prepared cookie sheets in 1&#8243; balls. Bake cookies 14-16 minutes until crisp around the edges and just set in the middle. Don&#8217;t let the cookies get too brown. Allow cookies to cool about 10 minutes before removing from cookie sheets.</li>

<li> 1/4 cup fresh blueberries</li>

<p><strong>Directions:</strong></p>
<ol>
<li><span> Bring water and sugar to a boil in a medium saucepan over medium heat. Stir in the rhubarb, turn heat to low, cover, and simmer until rhubarb is soft, 10 to 15 minutes. Mash and chill in the refrigerator, about one hour. </span></li>
<li><span> To serve, mix the grapes, orange, strawberries, apple, peach, plum, cherries, and blueberries with 2/3 cup of the rhubarb sauce. Stir gently, but thoroughly to coat. Refrigerate for at least two hours to allow the flavors to blend. </span></li>

<p><strong>Ingredients:</strong></p>
<dl>
<dd>
<ul>
<li>1 package (3.4-ounce) instant vanilla pudding</li>
<li>4 cups fresh berries (strawberries, blueberries, raspberries, or blackberries), washed and hulled, plus extra for garnish</li>
<li>1/4 cup plus 2 tablespoons sugar</li>
<li>2 teaspoons fresh lemon juice</li>
</ul>
<ul>
<li>1 cup whipping cream</li>
<li>1 teaspoon vanilla extract</li>
<li>24 to 36 ladyfingers</li>
</ul>

<p><strong>Directions:</strong></p>
<dl>
<dd>
<ol>
<li>To make the fillings, prepare the pudding according to the package directions and Let it chill.</li>
<li>Slice strawberries then toss all of the berries with the lemon juice and the 1/4 cup of sugar. Set aside for 30 minutes to allow the berries to release their juices.</li>
<li>In a medium mixing bowl, whip the cream, vanilla extract, and remaining 2 tablespoons of sugar until soft peaks form. Set aside.</li>
<li>To make the layers, set a layer of ladyfingers (around 7 or <img src='http://www.cookiegiftbaskets.com/gram/wp-includes/images/smilies/icon_cool.gif' alt='8)' class='wp-smiley' /> on the bottom of a large, clear serving bowl. Top with the berries with half of the pudding.</li>
<li>Add another layer of ladyfingers, another third of the berries and juice, and the rest of the pudding. Add a final layer of ladyfingers and berries. Top with the whipped cream and a berry garnish.</li>
<li>Refrigerate until you&#8217;re ready to serve. Serves 8 to 10.</li>

<li> Bake at 350° for 15-18 minutes. Sprinkle with marshmallows; bake 2-3 minutes longer. Remove to a wire rack. Using a knife dipped in water, spread the melted marshmallows evenly over top. Cool completely.</li>
<li> For topping, combine the chocolate chips, peanut butter and butter in a small saucepan. Cook and stir over low heat until blended. Remove from the heat; stir in cereal. Spread over bars immediately. Chill.</li>

<li>1 tsp baking powder</li>

<li>2 king-sized milk chocolate bars (e.g.      Hershey’s)</li>
<li>1 1/2 cups marshmallow creme/fluff (not      melted marshmallows)</li>
</ul>
<p><strong>Directions: </strong></p>
<ol>
<li>Preheat oven to 350°F. Grease an 8-inch      square baking pan.</li>
<li>In a large bowl, cream together butter and      sugar until light. Beat in egg and vanilla. In a small bowl, whisk      together flour, graham cracker crumbs, baking powder and salt. Add to      butter mixture and mix at a low speed until combined.</li>
<li>Divide dough in half and press half of      dough into an even layer on the bottom of the prepared pan. Place      chocolate bars over dough. 2 king-sized Hershey’s bars should fit      perfectly side by side, but break the chocolate (if necessary) to get it      to fit in a single layer no more than 1/4 inch thick. Spread chocolate      with marshmallow creme or fluff. Place remaining dough in a single layer      on top of the fluff (most easily achieved by flattening the dough into      small shingles and laying them together).</li>
<li>Bake for 30 to 35 minutes, until lightly      browned. Cool completely before cutting into bars.</li>

<p><strong>Directions</strong></p>
<p>(1) Preheat oven to 350 degrees. If desired, line <span id="IL_AD2">cupcake pans</span> with paper liners. You may also spray cupcake pan with a butter and flour <span id="IL_AD4">combination</span> spray that can be found in your local grocery store.</p>
<p>(2) Combine all ingredients in a large <span id="IL_AD1">mixing</span> bowl. Mix at low speed for 30 seconds while scraping bowl. Mix at high speed for 3 minutes, scraping bowl every minute.</p>
<p>(3) Spoon cupcake batter into liners until they are 1/2 to 2/3 full. You should have enough batter for 24-36 cupcakes.</p>
<p>(4) Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.</p>
<p>(5) Cool 10 minutes in pans then move to wire rack to cool completely.</p>
<p>(6) For Frosting, Combine 1/2 cup softened butter with 1 cup creamy peanut butter (crunchy can also be used). Add 2 cups powdered sugar (sifted after measuring), and up to 1/4 cup heavy cream until you get the consistency you want. For an extra special touch you can top with a mini peanut butter cup!</p>
