Batter Fried Bananas

1 cup rice flour

1/8 tsp. salt

1/2 cup coconut milk

1 tbs. oil

2 egg yolks

2 egg whites. Beaten stiff

1/2 cup flaked coconut

5 bananas, peeled and sliced in 1-inch lengths
Fat for deep frying sift the flour and salt into a bowl; beat in the coconut milk, oil, and egg yolks until smooth. Fold in the egg whites and coconut. Dip the bananas into the batter.
Heat the fat to 380 degrees. Fry a few pieces at a time until delicately browned. Drain and serve hot. ![]()
